Walnut Bread
Last weekend I decided to make walnut bread for the first time and was really pleased with the result :-)
I loosely based it on Maggie Glezer's walnut levain but had to make a few adjustments. Here is what I did:
Preferment:
15 g sourdough starter (store bought - I'll probably use more last time)
45 g warm water
75 g flour
Mix all the ingredients and place in a covered container over night (about 12 hours)
Dough
600 g all purpose flour
50g rye flour
50g whole wheat flour
455g warm water
7g instant yeast
1 tbsp honey
16g salt
120g walnuts
preferment
Disolve the yeast in the warm water adding the honey. Mix all of the flours. Slowly add the water mixture. Let the dough autolyse for about 20 minutes. Add the salt and the preferment and mix until smooth about 10 minutes. Add the walnuts at the very end and knead until evenly distributed.
Let the dough rest for about 3 hours turning it once after about 90 minutes.Cut the dough into two even pieces and form boules. Slash the dough if desired. Let sit for about 30 minutes and bake for about 30-35 minutes at 220°
